This is not your typical tour. From the moment that Andrés Picked us up to the end of the tour, it felt as if we were taking a day trip into the Columbian countryside with a local friend who is showing us around. When we got to our destination, we met Oscar who owns the chocolate farm. We learned about the entire process of planting and maintaining cacao trees, and how to replant them to increase productivity. Oscar does an excellent job of explaining how to recognize the cacao fruit when it is ripe and how to safely clip them off the tree.
Next, we go up to Oscar’s house Where we learned the entire process of fermenting, toasting, peeling, and grinding the cacao into chocolate. This tour also gives you an opportunity to participate in the process yourself. The final phase of taking the ground chocolate and putting it into molds for the final product is also explained and you are allowed to participate in the process. Finally you get to taste the different types of chocolate produced in the farm and have a chance, if you wish, to buy some to take home. At the end, Oscar‘s wife served us a cup of hot chocolate from their homemade chocolate which was very delicious.
